RYAN TRAIL :: Co-founder / CEO (Cheesy Executive Officer)
What was your first job? Not my first job but during college I hand bottled beer and mopped the floors at the fledgling New Belgium Brewing Company. After I got my engineering degree, I started doing projects for the brewery from plumbing and wiring to building machines and designing stuff. I learned about the art and science of fermentation. All valuable skills that I now apply to cheesemaking.
Earliest cheese memory? Beyond the industrial type of cheese was the Norman Camembert I shoved in my backpack before heading back from my first trip to France. It was ripe by the time I got home...you could smell it from a good distance. It opened my eyes to the possibility of cheese beyond cheddar.
Favorite pastime? Kayaking, camping, nerf gun wars with my kids, mountain bike riding and other 2 wheeled adventures.
Earliest cheese memory? Sneaking downstairs during my parents dinner parties to steal bites of the intense pink-colored Kaukauna port wine cheese balls that were rolled in nuts.
What do you love most about your job?I strive to capture the beautiful Northwest scenery and unique landscape in the artwork of our product labels and to share the passion I have for the creamery through the lens of my camera.
Favorite quote?"Courage is the power to let go of the familiar" - Raymond Lindquist. That sums up taking the leap of faith to move to Port Townsend and start a creamery!

Earliest cheese memory? Visiting the store down the road from my house as a kid to admire mouth watering huge blocks of cheddar displayed on the counter.
Favorite pastime? Skiing.

Where were you born?Maple View Farm that has been operated by the same family for 4 generations in beautiful Sequim, Washington.
What do you love most about your job? Providing the best quality milk for the most delicious cheese...now that is truly MOOvelous!

What do you love most about your job?Keeping the crew happy and light-footed.
Earliest cheese memory?My oldest brother and a friend convinced me that they would turn into monsters by eating shredded cheddar (I was 5 years old at the time).
Hidden talent few know about you?Used to compose fancy pants electronic music in Seattle.
What superhero ability would you love to possess? I would like the ability to make people see things as they really are! My name would be "The Realtor"
SARAH :: Production Manager (Curd Coordinator)
What do you love most about your job? I love that no two days are the same and that problem solving is part of daily work. I love working with an outstanding group of people who care about their work and each other. Mostly, I love working for a company that strives to make the best artisan cheese possible!
Favorite cheese? It's always changing. Right now, it's Red Alder but a couple of weeks ago it was Cirrus. I think they all held a favorite spot at one point.

What do you love most about your job? Learning new things everyday and constantly improving everything.
Hidden talent few know about you? I'm invisible when no one is looking.
How did you you come to live in Port Townsend?I came here for landscaping projects and fell in love. There is beauty in every direction. It is one of the prettiest places I have ever been.
What superhero ability would you love to possess? The ability to control subatomic particles with my mind. With this power you could do anything...fly, move at the speed of light, super strength, control space and time, immortality...endless possibilities.

Favorite vacation spot? Highlands of Scotland.
Earliest cheese memory? My grandparents always kept a stoneware crock full of Roquefort cheese in their fridge. When I visited them as a child, they would sip cocktails before dinner, I would sip a "Shirley Temple" and eat Roquefort cheese and crackers before dinner.

AMANDA :: Sales Manager
How did you come to live in Port Townsend? My husband and I decided the call of the West Coast was something we couldn't ignore. We bought a camper, loaded up our stuff and took a big left turn from Virginia and headed towards WA. I encourage everyone to have a mid-twenties crisis and drive across the country trapped in a a box-on-wheels with a dog and a cat. No regrets!
Favorite cheese? A piece of crusty bread with a slab of Cirrus, topped with my mom's strawberry jam is the best. But a Seastack and apple grilled cheese ain't bad either...
Favorite pastime? Being around the dining room table with family and friends. There is nothing more comforting than a home cooked meal, good company and a bottle (or two) of wine. Followed by a post-dinner passeggiata with the pup.

How did you you come to live in Port Townsend? We brought our family here nearly 30 years ago. We built a house, built a business and built a life.

Earliest cheese memory? When I was a little girl, my friend taught me to fold a Kraft single piece of cheese in half, nibble around, open it up to make a face.

Earliest cheese memory? My grandfather used to cook a whole head of cauliflower in the oven, covered in cheddar cheese. It was one of my favorite dishes when I was kid!

Favorite cheese?I honestly love them all, but I think Seastack is my favorite. Paired with some super crusty bread, I’m not sure I need any other sustenance in my life.

How did you come to live in Port Townsend? After living many years in Portland, OR, my partner and I needed a change. We sold most of our possessions, bought 2 plane tickets to South America and spent a winter traveling through Bolivia and Chile. When we came back to the U.S., we decided that the beautiful Olympic Peninsula would be our new home and we couldn’t be happier!
What do you love most about your job?My favorite people are people who enjoy food, so I get a huge kick out of seeing a customer’s face when they taste our cheese and love it.
