AGED SEMISOFT CHEESE

An alpine style cheese, carefully hand-washed and aged to enhance its nutty and earthy characteristics. Red Alder takes its name from the majestic trees lining the rivers of the Olympic Peninsula.

Pairings:

Milky, fruity notes pair well with most lighter bodied white wines.  Almonds highlight toasted caramel flavors.

Aging:

Red Alder is aged for two months prior to release. During that time it is washed periodically with a brine solution which helps develop its characteristic red and gray colored rind. After packaging it ages very slowly.
