SCOTCH ALE WASHED TOMA

A Salish Sea inspiration, we take our semi soft-ripened cheese and wash it with Pike Brewing Company's "Kilt Lifter" Scotch Ale. The result is pungent and earthy with a sweet malty finish. As a member of the washed rind family of cheeses, Off Kilter steps toward the "stinky" end of the spectrum, but finds the perfect flavor balance.

Pairings:

Off Kilter shines with Charcuterie, but it is also delicious thinly sliced at room temperature over a thin crostini.

Pinot Noir's sweet, fruity flavors play well with the malty flavor and fatty texture of the cheese. 

Aging:

Off Kilter's best by date is 90 days after it is made. Approximately 50 days prior to its best by date it undergoes a dramatic transformation in texture and flavor. The cheese takes on a supple, fudge-like consistency and it's flavor deepens significantly.  Early on it has a milky fresh, tart flavor, which rounds out to become malty, nutty and meaty.
